National Champagne Day

If you are casually into champagnes or so entrenched that your palate can discern the difference of a true Champagne Region blanc de blanc from a California sparkling white, you have probably heard the tale about the Bénédictine monk, Dom Perignon,  creating sparkling wine and declaring “Come quickly, I’m tasting stars!”

Whether true or not, one sip of good bubbly and you know your party has started. The heavens have aligned and everything is right in your world, maybe just for the 1 moment. There is a reason this is the drink we toast most of our life’s greatest accomplishments with.

Like life, champagne comes into its own after a series of squeezing, stewing, fermenting, and resting. At one point, the champagne faces its defining great barrier [the cork] which it pushes against until some divine hand sabers that blockage and the champagne explodes from its cusp of greatness. Each bubble, a new hope rising to the top, is birthed from its protective womb and gently breathes. It’s sweetness resting on your lips, in its final expression of weary wonderfulness. Champagne is a liquid celebration of a grape’s victorious death.  As you cheers tonight, make sure that you live a life that has as wonderful a finality and finish.
